Paul calls Peter's staying away from the Gentiles "this hypocrisy" because Peter was pretending to be like those Jews who say that Gentile Christians have to be circumcised.
"the rest of the Jews became hypocrites like Peter." They knew that it was ok to eat with Gentiles, but when people from the circumcision group came, they pretended that they did not eat with Gentiles.
